Tortilla Bread from Slavonski Brod
Starting this series with a recipe we received while crossing Croatia on a hot summer day
When starting this blog, we said we wanted to post recipes from our trip, but did not define this further. We did not know exactly how this would happen. Today, we were given an answer while roaming around.
On our way from Croatia to Serbia, we stopped for lunch in Slavonski Brod. Our only goal was to see the local fortress and find some food. The town made us feel on the set of “High Noon”. One narrow street of two stories buildings, 38ºC, no shade, no one in sight. We were expecting to be held at gunpoint by the Sheriff. Instead, we walked into quite a random food joint that was playing progressive house music and ordered the first item on the menu. We received a delicious Kofte wrap that contained hummus, grilled bell peppers, feta cream, and salad. But the best part was the tortilla bread. Just amazing.
When paying, we told the cook that the bread was incredible, and he just said
Do you want the recipe?
There it was. The first recipe from our trip, volunteered to us without even asking.
Here it goes
Ingredients
3 cups of flour
1 pinch of salt
5 grams of baking powder
1 cup of hot water (80-90ºC)
1/3 cup of oil/fat
Directions
Mix flour, salt and baking powder
Add water and knead
Separate into balls and let rest for 10 minutes
Stretch the balls with a rolling pin into a thin round shape
Cook in a very hot pan, 30 seconds per side. The tortilla will bloat like a balloon first. Do not poke it, just flip it once.
Use immediately as a wrap for your favorite filling
Of course, we did not have time to test the recipe. We do not even know how many tortillas this makes, so have fun figuring that out.
We were told that using oil makes good tortillas, but using lard makes the best ones. Dobar tek!
